Fox & Fox Inspiration Blanc de Blancs 2015 (75cl)
Viticulture:
The climate here is similar to Champagne, allowing for a long,
even ripening season. The two vineyards lie on a combination of
ancient clay, shale and sandstone. Here Pinot Noir, Pinot Meunier,
Chardonnay and Pinot Gris are grown from medium-yielding
Burgundy clones, trained on a double-Guyot trellising system. The
vineyards are worked rigorously by hand with great attention paid
to minimising spraying and maximising canopy management and
vine nutrition.
Winemaking:
Entirely from the Lakestreet vineyard, this unique Pinot-Gris
dominated wine is bottle-fermented and spends a minimum of
28 months ageing on yeast lees.
Tasting Note:
Vibrant flavours of lemon curd, yellow plum and brioche, with a
generous creamy mouthfeel balanced by a thread of elegant
grapefruit acidity and fine, lingering bubbles.
Food Match:
A great match with chili and lemongrass prawns or scrambled eggs and smoked salmon.
