Fox & Fox Tradition Blanc de Noirs 2014 (75cl)

Viticulture:

The climate here is similar to Champagne, allowing for a long,
even ripening season. The two vineyards lie on a combination of
ancient clay, shale and sandstone. Here Pinot Noir, Pinot Meunier,
Chardonnay and Pinot Gris are grown from medium-yielding
Burgundy clones, trained on a double-Guyot trellising system. The
vineyards are worked rigorously by hand with great attention paid
to minimising spraying and maximising canopy management and
vine nutrition.

Winemaking:

The fruit is entirely from the Lakestreet vineyard and is whole
bunch pressed. The first fermentation occurs in steel tanks, then
the second fermentation in bottle followed by at least 28 months
on lees.

Tasting Note:

Impressive, rich, powerful sparkler with layers of ripe, honeyed
fruit, notes of nectarine, quince toast and nuts. Great depth and
complexity.

Food Match:

Roast pork and apple sauce, mushroom risotto.
